Recipe Summary Hawaij/All-Purpose Seasoning

This is inspired by a recipe for traditional Hawaij. A great and simple blend of spices that has become one of our favorite general seasonings. I use this as a rub for chicken a lot, but it is also a great seasoning for rice, fish, pork, even shrimp and mixed veggies.

Ingredients | All Jokers In Order

3 tablespoons coarsely ground black pepper

3 tablespoons ground cumin

1 ½ teaspoons ground turmeric

1 teaspoon ground cardamom

1 teaspoon ground sumac

¼ teaspoon kosher salt (Optional)

Directions

Whisk pepper, cumin, turmeric, cardamom, sumac, and salt together in a bowl. Store in a container with a lid in a dark place for up to 6 months.

Salt can be omitted. The ground sumac really adds an additional layer of flavor to this mix. Cayenne pepper or red pepper flakes can easily be added if a little heat is desired.
